This isn't weeknight dip territory — this is restaurant-level silky hummus in your kitchen, 10 minutes flat. The secret? Ice cubes. They cool the blend, emulsify the tahini and olive oil, and create that airy, whipped texture without watering anything down. Canned chickpeas, fresh lemon, garlic, and a high-powered blender do the rest.
🍴 INGREDIENTS: • 1 garlic clove, smashed, peeled • 1 (15.5-oz.) can chickpeas, drained and rinsed • ¼ cup tahini • 3 Tbsp. fresh lemon juice • ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt, plus more • ¼ tsp. freshly ground black pepper • ¼ tsp. ground cumin, plus more for serving (optional) • 2 Tbsp. extra-virgin olive oil, plus more for drizzling • 2 ice cubes • Up to 1 Tbsp. chilled water (optional)
🥄 METHOD: 1. Purée garlic clove, chickpeas, tahini, lemon juice, salt, black pepper, and cumin (if using) in a high-powered blender or food processor, using blender tamper if needed to encourage solids to break up, until very smooth, about 3 minutes. 2. With the motor running, stream in olive oil, then add ice cubes; purée until very light and creamy, about 2 minutes. 3. For a slightly looser hummus, blend in up to 1 Tbsp. chilled water, adding a splash at a time. 4. Taste hummus and season with more salt if needed. 5. Transfer to a shallow bowl and drizzle with more oil and an extra pinch of cumin.
