Garlic Confit is what happens when raw cloves meet patience and heat — and the result changes everything.
This is the French preservation technique that turns pungent garlic into a sweet, jammy, spreadable weapon. Two hours in the oven, zero babysitting required. You get tender golden cloves that mash into steak butter, smear onto toast, or fold into mashed potatoes. Bonus: the oil becomes a deeply savory cooking medium for dressings, marinades, or anything that needs a mellow garlic hit.
🍴 INGREDIENTS: • 3 heads of garlic, cloves separated and peeled • 1½ cups grapeseed oil (or more if cloves aren't submerged)
🥄 METHOD: 1. Preheat oven to 250°F. 2. Combine garlic cloves and grapeseed oil in a small ovenproof saucepan (add more oil if cloves aren't submerged). 3. Cover and bake until cloves are golden and tender, about 2 hours. 4. Let cool, then transfer garlic and oil to an airtight container and chill. 5. Bring to room temperature before using.
Save this for Sunday supper prep. Store refrigerated at or below 38°F for up to 2 weeks — or freeze in ice cube trays for drop-in portions.
